Which processed foods are better than natural?
"Naturalness does not always imply that a meal is healthy," says Christina Sadler, manager of the European Food Information Council and researcher at the University of Surrey.
Natural foods, on the other hand, can contain toxins, and less preparation can make them safer. Lectins, for example, are found in kidney beans and can cause vomiting and diarrhoea. The beans are soaked in water overnight and then cooked in boiling water to remove them.

One of Italy's Best Bakeries Is in a State Prison
The bakery's schedule is organised into three 4hr shifts a day, all days a week, to maximize the number of prisoners who can be engaged. Staff turnover is about 30 to 40 percent as some inmates are released throughout the year. Four professional pastry chefs also work in the bakery, instructing and managing the prisoners.
Besides housing more than 500 inmates, Due Palazzi is also home to the Giotto bakery, a pastry shop that is famous across Italy. Their panettone, an Italian Christmas classic, has been frequently ranked #1of the best in the country. They also make chocolate pralines, biscuits, ice cream, etc. The whole production side takes place here, in the prison.
